David Bouley And Paul Qui Make Bon Appetit’s List Of Best New Sushi Restaurants

Bon Appetit did a round-up of the 10 Best New Sushi Restaurants in America and both New York Times critical darling David Bouley and Top Chef: Texas winner Paul Qui had restaurants land on the list.

While David is widely known for his French flagship Bouley, which holds two 3-star ratings from the New York Times, his recently opened brushstroke offers up sushi down in Tribeca. Patrons have a set menu for a multi-course meal, which sounds ever-so-slightly fancy for a late-night sush-venture, but it grabbed a 2-star rating from the Times to join its high-falutin’ big sister restaurant.

Paul Qui, meanwhile, is serving up rolls like a boss down in Houston at Uchi, the second location of the Tyson Cole-helmed restaurant group, where he is the executive chef. Qui, in fact, just won a James Beard Award for his work at Uchi, which we’re sure gave it a serious boost to land on Bon Appetit’s list.
