Fabio Viviani To Open Restaurant In Chicago
Chicago residents may soon see an Italian man walking a turtle down their streets: Top Chef contestant and Richard Blais bro-lover Fabio Viviani is opening up a new restaurant in the Midwest.
Partnering with Luke Stoioff and David Rehkson, two prominent restauranteurs in the area, Viviani confirmed to Eater that he already had a location secured in the River North neighborhood, but didn’t specify where. ”I’ve been a fan of Chicago before I was involved with any business,” he said. “Chicago is getting to the point where New York was for restaurant business… it’s a great destination for fantastic food and food personalities.”
“I’m involved so it’ll be fairly Italian,” he added, and we all breathed a sigh of relief that he would be making gnocchi and not turtle food.
He gives a shoutout to some of the chefs who he wants to hang out with when he reaches Chi-town (Rick Bayless, Tony Mantuano, and Top Chef Stephanie Izard), and says that he’ll be in business by the end of 2013.
