Food Porn Friday: Sean Brock’s Iron Roasted Grouper Makes Spring Dieting Bearable

WHAT: Husk — which just opened a second location in Nashville — is a celebration of Southern ingredients. “If it ain’t Southern, it ain’t walkin’ in the door,” Brock told AndrewZimmern.com in a Q&A early this year. This particular dish is as locavore-leaning as it is acceptable to your diet (well, unless you’re eliminating). A fancy interactive feature on the restaurant’s website shares the origin story of every item on the plate. The grouper is sourced from a Community Supported Fishery, and the shrimp caught by a team that’s been harvesting in the waters surrounding Charleston for over 20 years. The cowpeas (in that lovely green puree), grains, and corn, were all grown within a scare crow’s shadow of the table on which this tasty plate gets served.
