Meet Jonathon Sawyer, a Cleveland Chef You Need to Know

 

As we mentioned in our predictions for 2016, this year will bring more guest chef pop ups.

On January 26th, Momofuku Ssäm Bar, helmed by David Chang and run by Matthew Rudofker will be hosting chef Jonathon Sawyer from Greenhouse Tavern in Cleveland.

Guest chef Sawyer won Food & Wine’s “Best New Chef” award in 2010, and in 2015 he won a James Beard award for Best Chef: Great Lakes. He had a stint in New York during which he worked for Charlie Palmer and Michael Symon before heading back to Cleveland where he’s from. Since then, he’s opened four distinct restaurants, including ramen spot Noodlecat, Northern Italian restaurant Trentina, and his flagship restaurant, Greenhouse Tavern. Sawyer will be going to Momofuku Ssäm Bar as the head chef of Greenhouse Tavern, which has been certified by the Green Restaurant Association and uses local produce, protein and grain to make New American Fare.

Momofuku Ssäm Bar’s One Night Dinner Series features guest chefs and allows New York City diners to experience many different chefs and cuisines in one of the city’s best restaurants. Sawyer will prepare a Greenhouse Tavern style meal for guests to try.

Rudofker, of Momofuku Ssäm Bar, now 27, has been working for Chang’s East Village spot since was 25, and was named one of Forbes 30 under 30 for food and wine this year. Before that, he worked for Daniel Boulud’s Daniel, which we don’t need to tell you about, and The Fat Duck in England. Of Rudofker, Chang told Forbes that he would “build an entire company around him,” so we’d definitely bet on him too.
