Noma’s Head Chef Is Just As Confused By Rene Redzepi’s Ingredients As We Are
Our heads start spinning every time Rene Redzepi tweets another photo of the wacky ingredient of the day at Noma, from juniper brains to ants, but, hey, he’s running the best restaurant in the world, so we go with it. We have to admit, however, that we were quite relieved Noma’s American head chef Matthew Orlando is just as confused as we are sometimes by the unique regional offerings of Scandinavia. Says Matthew of manning the kitchen at Noma:
“The ingredients that were coming in the back door, I would say 50% of them I had never even seen before. Ingredients that are so indigenous to Scandinavia that they don’t exist anywhere else in the world. And if they do exist, people aren’t using them. And so the fact that we’re using these ingredients that I had never seen before, I was like a kid in a candy shop.”
