Paul Qui Dishes On East Side King Plans and New Restaurant Details
In addition to the flagship joint he will soon be opening in Austin, Paul Qui is planning a few other exciting endeavors. Specifically these: he will be opening two new East Side King trailers, as well as revamping the menu of a third.
The two new trailers will arrive on South Lamar and at Hole In The Wall, a bar and restaurant near the UT-Austin campus. Grackle, one of the pre-existing trailers, is undergoing renovations and will be reopened with a new menu. Each location will feature a different type of cuisine — Grackle, for example, will specialize in Japanese street food — in order to keep them fun and experimental.
As for his own restauarant, it will open on East 6th Street rather then South Lamar (as was originally reported), and Paul says he hopes to have it open by November. Until then, he plans to continue consulting at Uchiko.
