Rene Redzepi And David Chang Think Kangaroo Should Replace Steak In Australia

Serving kangaroo only became legal in Australia in 1993, and the hesitation to eat it wasn’t because they’re the most bouncy, trouncy, flouncy, pouncy, funfunfunfunfun creatures that exist outside of cartoons. Rather, it was because Australians prefer serving kangaroo meat as pet food. We know. Rene Redzepi was just as shocked as you are right now. He and David Chang were in Australia for a Margaret River Gourmet Escape, and they chatted with Bon Appetit about de-stigmatizing kangaroo meat down under.

“Getting it as a regular meat on a consistent basis is very difficult,” Chang explained of the lack of reliable kangaroo ranchers. “It is still something that I feel the greater Australian dining public doesn’t want on their plate necessarily.”

But why? Especially when David Chang has a Momofuku restaurant in Sydney and could make it so delicious!

“Quite frankly,” he said, “I think it should displace the cow in Australia.”

Redzepi (of course) whole-heartedly agrees: “I love a good steak as much as anybody, but a steak is a steak is a steak. So it is lovely to come and eat some of these local delights.”
