The one thing that undoubtedly weighed on everyone’s minds after they left The 21st Century Limited, where Alinea staged a pop-up at Eleven Madison Park and vice versa, was how Grant Achatz and Daniel Humm managed to pull the whole thing off. (Okay, perhaps it was second to the food.) But as this video from the Alinea team shows, it takes a lot of precision and timing — making it suitable for the two notoriously meticulous crews, who both had to run their restaurants at the same high level, but with different restaurants, different FOH staff, and different cooks.
