Let’s just say that everyone who works at Dan Barber’s vegetable palace isn’t a complete farm-to-table obsessive — in fact, at a late night party at Blue Hill, someone’s Mexican mother ships in frozen mole. There’s nothing wrong with freshly-made mole from Mexico, don’t get us wrong, but Alice Waters would probably cry more than a few tears over the CO2 that you monsters belched into the world by shipping your precious mole.
