In this ad for BMW that looks like it’s a bootleg movie from China, Dan Barber talks about his “one thing”: sustainable hedonism. He then gives us, the audience, a tour around Stone Barns at Blue Hill, where he and his team farm and cook. But it’s not just normal cooking: he’s figured out how to use the natural heat from his compost piles to cook food. “164!” he declares, pulling a giant thermometer out of a compost bin that’s been slowly cooking vacuum-sealed radicchio. “That’s a free stove.”
One, that’s a super cool method. Two, the next time the Obamas are eating at your restaurant for dinner, we’re pretty sure the Secret Service would have quite a few things to say about that cooking method.
